Marinated Cucumbers

We enjoy this recipe all year round - it even makes the supermarket cukes taste good.  With a little sugar and a little vinegar it's a refreshing addition at the dinner table.  The recipe is quite simple:

For every cucumber you use, mix together 1/4 c white vinegar, 1/4 c granulated sugar, a pinch of salt and a pinch of pepper.  That's it!

Cut the cukes fairly thin, add thinly sliced onions if you like, and let marinate in a covered container in the refrigerator 2 - 24 hours, stirring occasionally to make sure the sugar disintegrates.  

Any less than 2 hours and the flavors haven't quite melded.  More than 24 hours tends to begin to turn them mushy.
