Quick and Easy Freezer Zucchini Pickles




Another wonderful way to use up the plethora of zucchini!

7 c. zucchini, thinly sliced
1 large (2 small) onions, thinly sliced
1 t. celery seed
1 t. salt
2 c. sugar
1 c. cider vinegar
7 1-pint freezer-safe containers

Combine all ingredients, except sugar and vinegar, in a large bowl.  In a separate bowl, mix togther sugar and vinegar.  Stir until sugar dissolves.  Add to zucchini mixture and stir until blended.

Refrigerate 24 hours.  Spoon into freezer-safe containers and freeze.  Store for up to 1year in the freezer or up to 3 weeks in the refrigerator.

Just wanted to say ty for the recipe, made these a couple weeks ago and took some out of the freezer to try and I can't stop eating them!
