I just love bar cookies.  They are so much quicker than regular cookies since you don't have to bake them in batches.  The chewy buttery flavor of these is so yummy and comforting.  

1 1/2 c all-purpose flour
1 t baking powder
1/4 t salt
1 1/2 c packed light brown sugar
12 T unsalted butter, melted and cooled
2 large eggs, at room temperature
4 t vanilla extract
1/2 c milk chocolate or semi-sweet chocolate chips
1/4 c white chocolate chips

Preheat oven to 350 degrees.

Spray a 13x9" baking pan lightly with non-stick cooking spray.

In a small bowl combine the dry ingredients - flour, baking powder and salt.

In a medium bowl whisk the brown sugar and butter together just until combined.  Whisk in the eggs and vanilla until incorporated.  Stir in the flour mixture until no streaks remain.  Stir in the chips.

Scrape the batter into the prepared pan, smooth the top, and bake 22 - 25 minutes, until a toothpick inserted in the center comes out with a few crumbs attached.  Do not overbake.

Let cool completely before cutting into bars and removing from the pan.
