Salad? Not exactly. Tasty? Yes, definitely. An easy-to-make refreshing treat. Although you could use virtually any flavor jello and any fruit I've stayed loyal to the orange. This recipe can be easily cut in half and poured into an 8" or 9" pan.
6 oz. package orange instant gelatin
2 c. boiling water
6 oz. cream cheese, softened
1 - 14oz. can sweetened condensed milk
1 1/2 c. heavy cream or whipping cream
1 c. mini marshmallows
1 can mandarin oranges, drained
In a small bowl, dissolve gelatin in the boiling water.
In a large mixing bowl, beat the cream cheese on medium-high until light and fluffy. Turn mixer to low and gradually blend in the hot gelatin mixture (mixture will get very watery). Mix until lumps are gone. Stir in the sweetened condensed milk. Place in the refrigerator for 15 minutes.
Meanwhile, beat the cream until stiff peaks form. Remove the orange mixture from the refrigerator once the 15 minutes has lapsed and fold in the marshmallows and oranges. Fold in the whipped cream.
Transfer to a 13"x9" pan. Refrigerate 4 hours or until firm. Serve.
