Homemade Wheat Thin Crackers


I honestly don't know why it took me so long to attempt to make crackers at home, but I'm happy I finally took the leap.  They're easy.  Really easy.  And so very tasty.  The best part is there isn't one ingredient you can't pronounce.

Make these to accompany the cheese platter at your Holiday party this year and your guests will be amazed.


Homemade Wheat Thin Crackers

Makes about 8 dozen crackers

1 c. unbleached pastry flour
1 c. whole wheat or white whole wheat flour
1/4 c. sesame seeds
1/4 c. granulated sugar
1/2 t. salt
4 T. unsalted butter, cold, cut into 4-6 pieces
scant 1/2 c. milk
coarse salt (optional)

Preheat the oven to 325 degrees Fahrenheit.

In a large bowl, combine the flours, sesame seeds, sugar and salt.  Cut in the cold butter, then stir in the milk, adding it slowly until just enough milk is added to form a workable dough.

Divide the dough into 3 pieces.  Roll one of the pieces ultra-thin (about 1/16 inch).  Cut the dough into 1"x2" rectangles (I used a pizza cutter).  Sprinkle with coarse salt, if using, and lightly press it into the dough.  Transfer the crackers to baking sheets.  Repeat with remaining dough and bake 20-25 minutes, or until they begin to brown.

Cool on a rack.  Store in a sealed container at room temperature.
