Homemade Indoor S'mores


These easy to put together treats are delicious.  If you make your own graham crackers and marshmallows they are even more delicious.  Perfect for a cold winter day.

The buttery flavor of the homemade graham cracker coupled with that fresh vanilla flavor of the homemade marshmallow and then topped with a dip of chocolate makes these simple treats absolutely divine.  These would also be great to serve if you have chocolate fondue at a holiday gathering.  Your guests can add as much or as little chocolate as they would like.  Messy, but delicious.

If you need to cut corners because of time, use store bought graham crackers but make the marshmallows - they can be cut to fit the cracker and they are so much more fluffy and flavorful.  They really do make all the difference.  Remember they need to sit for at least 8 hours, so keep this in mind when planning the s'mores.

Fresh homemade s'mores stay perfect for about 24 hours.  After that the graham cracker begins to soften - still good, but no longer crunchy.  If you're giving away as gifts, consider giving the homemade graham crackers and homemade marshmallows {cut to fit the graham crackers} along with a chocolate bar, all packaged separately.  Attach a copy of the instructions for the recipient.  A perfect gift!

Homemade Indoor S'mores

For each S'more, you'll need:
1 graham cracker cut in half
1 homemade marshmallow, cut to fit half the graham cracker
1/4 cup of chocolate chips or a chocolate bar


Make as many of the homemade graham cracker cookies as will be needed (1 whole graham cracker per s'more) and 1 batch of the homemade marshmallows.  Pour the homemade marshmallows in a 12x9 or 13x9 pan so they are a little bit thinner.

Prepare a baking sheet with waxed paper.

Once the marshmallows have sat overnight, remove them from the pan per the directions and lay 1/2 of a graham cracker on top of the marshmallow mixture.  Score the marshmallows with a sharp knife.  Completely cut with a knife, sandwich between 2 graham cracker halves.

Melt the chocolate chips or other type of chocolate in a microwave-safe bowl in 20 second intervals on high until melted, stirring after each.  Dip the graham cracker-marshmallow sandwich into the chocolate and, using a spoon, spoon the chocolate about halfway up the cracker.  Lay on the prepared baking sheet on the waxed paper.  Let sit until firm, about 30 minutes.  Continue with each s'more.  Serve.
