Crockpot Baked Apples


There's nothing better than finding more uses for your slow-cooker than just dinner.  This smells delicious while it's cooking and is the perfect dessert on a chilly Fall night!

Crockpot Baked Apples
serves 6

6 large baking apples
1/2 cup golden or regular raisins
1/2 cup chopped walnuts
1 cup packed light brown sugar
1 teaspoon ground cinnamon
4 Tablespoons unsalted butter, melted
1 1/4 cups apple juice or apple cider

Wash and core the apples.  In a medium-size bowl, stir together the raisins, walnuts, brown sugar, cinnamon and butter.  Carefully fill the apples and place the apples, standing up, in the slow cooker.  Pour the juice or cider on the bottom of the cooker.  Cover and cook 2 1/2 - 3 hours on low, until apples are tender.

Remove the apples using a spatula
