6 Weeks of Holiday Food Gift Ideas, Week 4: Mixes In Jars {Cranberry-Walnut Quick Bread and Cinnamon Coffee Cake}


I love both giving and receiving mixes in jars.  They are fantastic to have in the pantry - perfect for a quick dessert.  Instead of the typical cookie mix, I thought I'd share a Coffee Cake mix and a Quick Mix that we enjoy.  The Quick Mix looks very festive with dried cranberries, but feel free to substitute another dried fruit - I used dried blueberries because I have so many on hand.


Cinnamon Coffee Cake Mix In A Jar
Fills a 1-Quart Canning Jar

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
vanilla bean seeds scraped from 1 vanilla bean {directions below if you don't have a vanilla bean}
1 cup granulated sugar
1/2 cup cinnamon chips
1/2 cup chopped nuts - pecans or walnuts


In a medium bowl mix together the flour, baking soda, baking powder, ground cinnamon, vanilla bean and sugar.  Place in a 1-Quart canning jar, using a funnel or carefully spooning it in.  Gently shake the jar so the mix is even.  Top with the cinnamon chips, as a layer, and then the nuts as the final layer.

Attach the following instructions for the recipient:
To Make The Cinnamon Coffee Cake
Need:
8 Tablespoons unsalted butter, softened
2 large eggs
1 cup sour cream or Greek-style yogurt
3/4 cup whole milk

Preheat the oven to 350 degrees Fahrenheit. 
Grease and flour a 9-inch square baking pan.
In a large bowl, mix together the butter, eggs and yogurt until well blended.  Add the contents of the jar, stirring into the butter mixture, then slowly stir in the milk until fully incorporated.

Pour into the prepared pan and bake 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Remove from the oven and let cool slightly.
Serve Warm.

{**If you didn't use vanilla beans, add 1 teaspoon vanilla extract to the directions and include it mixed in with the butter, eggs and yogurt.**}




Cranberry-Walnut Quick Bread Mix In A Jar
Fills a 1-Quart Canning Jar

1 3/4 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup granulated sugar
vanilla bean seeds scraped from 1 vanilla bean {directions below if you don't have a vanilla bean}
1 cup walnuts
1 cup dried cranberries {or other dried fruit}
1/2 cup packed light brown sugar

In a medium bowl, mix together the flour, baking powder, salt, granulated sugar and vanilla bean. 
Place in a 1-Quart canning jar, using a funnel or carefully spooning it in.  Gently shake the jar so the mix is even.  Top with the nuts as a layer, the cranberries as a layer, and then the brown sugar as the final layer, gently packing it down.

Attach the following instructions for the recipient:
To Make The Cranberry-Walnut Quick Bread Mix
need:
2 large eggs
4 Tablespoons unsalted butter, melted
3/4 cup whole milk

Preheat the oven to 350 degrees Fahrenheit. 
Grease a loaf pan.
In a large bowl, beat together the eggs, butter and milk.  Add the contents of the jar and mix just until combined. 
Pour into the prepared loaf pan and bake 45-50 minutes, until a toothpick inserted in the center comes out clean.
Remove to a cooling rack to allow to cool for 5 minutes.  Remove the quick bread from the pan and allow to cool completely on the wire rack.
